Steps
- In a bowl, combine flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, stir coffee into milk until dissolved.
- Add butter (melted), egg, and vanilla and mix well.
- Stir wet ingredients into dry until moistened.
- Fold in chocolate chips.
- Fill greased or paper lined muffin cups 2/3 full, and bake at 375 F for 17-20 minutes.
- When cooled for 5 minutes, transfer to wire rack to cool.
- To prepare spread, combine cream cheese, sugar, instant coffee, vanilla, and chocolate chips in a food processor until well blended.
- Serve muffins with spread!
