Cappuccino Muffins

Ingredients

  • all purpose flour
    2 cups
  • sugar
    3/4 cups
  • baking powder
    2 1/2 tsp
  • cinnamon
    1 tsp
  • salt
    1/2 tsp
  • instant coffee
    2 Tbsp
  • milk
    1 cups
  • butter
    1/2 cups
  • egg
    1 quantity
  • vanilla
    1 tsp
  • mini semisweet chocolate chips
    3/4 cups
  • cream cheese
    4 oz
  • sugar
    1 Tbsp
  • instant coffee
    1/2 tsp
  • vanilla
    1/2 tsp
  • mini semisweet chocolate chips
    1/4 cups

Steps

  1. In a bowl, combine flour, sugar, baking powder, cinnamon, and salt.
  2. In a separate bowl, stir coffee into milk until dissolved.
  3. Add butter (melted), egg, and vanilla and mix well.
  4. Stir wet ingredients into dry until moistened.
  5. Fold in chocolate chips.
  6. Fill greased or paper lined muffin cups 2/3 full, and bake at 375 F for 17-20 minutes.
  7. When cooled for 5 minutes, transfer to wire rack to cool.
  8. To prepare spread, combine cream cheese, sugar, instant coffee, vanilla, and chocolate chips in a food processor until well blended.
  9. Serve muffins with spread!
