SPinach Salad w/ Strawberries

Ingredients

  • Pecans
    1 cups
  • Egg White
    1 quantity
  • Vanilla
    3/4 tsp
  • Sugar
    1 cups
  • Water
    1 Tbsp
  • Salad Oil
    1 cups
  • Cider Vinegar
    1/3 cups
  • Poppy Seeds
    1 Tbsp
  • Salt
    1 tsp
  • Dry Mustard
    1 tsp
  • Celery Seed
    1 tsp
  • Corn Syrup
    2 Tbsp
  • Fresh Spinach, washed and dried
    6 cups
  • Strawberries, sliced
    2 cups
  • Thinly Sliced Red Onion
    3/4 cups
  • Sliced Fresh Mushrooms
    1 cups

Steps

  1. Spiced Pecans (use ingredients 1-5): Beat egg white until frothy, but not stiff. Add vanilla, sugar and water. Add pecans and mix to coat. Spread pecans on baking sheet in a single layer, bake in a pre-heated 200 degree oven for 45 minutes, turning them every 15 minutes.
  2. Dressing (use ingredients 6-12): Toss all ingredients together.
  3. Just before serving, toss salad ingredients (13-16) with dressing.
  4. Sprinkle dressed salad with pecans.
  5. May replace strawberries with blueberries, or a mix of the two.
