BEETS WITH ORANGE VINAIGRETTE

INGREDIENTS

  • Baby Beets
    3 cans
  • Raspberry Vinegar
    2 Tbsp
  • Orange Juice
    2 Tbsp
  • Olive Oil
    3 Tbsp
  • Salt, Kosher
    1 1/2 tsp
  • Black Pepper
    1/2 tsp
  • Onion, Red
    1/2 cups
  • Oranges, Deedless
    2 quantity

STEPS

  1. Drain the beets and dice into 1/2 inch cubes. Place beets in a mixing bowl and add raspberry vinegar, fresh squeezed orange juice, olive oil, salt, pepper and a small red onion, diced.
  2. Zest the oranges then cut into sections over a bowl to catch the juices. Add the orange zest, oranges sections, and any juices to the previous ingredients and mix well. Taste for seasoning and serve cold or at room temperature.
