STEPS

- Cook pasta al dente. Retain 1 cup cooking liquid
- Defrost spinach in microwave, approximately 8-10 min. on "defrost"
- In a medium saucepan, melt butter, whisk in flour, and cook for 1 minute
- Whisk in stock and milk, and season with salt, pepper, and a pinch of nutmeg. Allow to thicken 5-6 min.
- Stir in grated parmigiano and reduce heat to low
- Wring spinach completely dry in clean kitchen towel. Break up and add to saucepan.
- Add reserved pasta cooking liquid
- Toss pasta with spinach-white sauce and season to taste
