FLORENTINE MAC AND CHEESE

INGREDIENTS

  • cavatappi
    1 lb
  • parmigiano
    1 cups
  • butter
    3 Tbsp
  • flour
    2 Tbsp
  • chicken stock
    1 cups
  • milk
    1 cups
  • nutmeg
    quantity
  • frozen spinach
    20 oz

STEPS

  1. Best Served with Roast Chicken Sausage Meatballs!
  2. Cook pasta al dente. Retain 1 cup cooking liquid
  3. Defrost spinach in microwave, approximately 8-10 min. on "defrost"
  4. In a medium saucepan, melt butter, whisk in flour, and cook for 1 minute
  5. Whisk in stock and milk, and season with salt, pepper, and a pinch of nutmeg. Allow to thicken 5-6 min.
  6. Stir in grated parmigiano and reduce heat to low
  7. Wring spinach completely dry in clean kitchen towel. Break up and add to saucepan.
  8. Add reserved pasta cooking liquid
  9. Toss pasta with spinach-white sauce and season to taste
