APRICOT FOLDOVERS

INGREDIENTS

  • solo apricot filling
    12 oz
  • flour, sifted
    2 1/2 cups
  • salt
    1/2 tsp
  • butter
    1/2 lb
  • egg yolks
    3 quantity
  • vinegar
    3 tsp
  • cold water
    3 tsp

STEPS

  1. Sift 1.5 cups of flour and salt into a bowl. Cut in butter like a pie crust
  2. In a separate bowl, sift 1 cup flour and add egg yolks, vinegar, and water and bled well
  3. Combine both mixtures using a fork to blend well
  4. Wrap dough in lightly floured plastic wrap or foil and chill for at least 1 hr.
  5. Working with 1/3 of dough at a time, roll onto a floured surface to about 1/8 in. and cut with a 2.5" fluted cookie cutter
  6. Place 1/2 t. filling in center and fold over, pinching well
  7. Place on ungreased cookie sheet and bake at 375 F for 10-12 minutes until lightly brown
  8. Sprinkle with powdered sugar
