Healthy Olive Oil Cookies w/ Sunflower & Sesame Seeds

Ingredients

  • Large free-range brown egg
    2 quantity
  • Extra-Virgin Olive Oil
    1 cups
  • Pure Vanilla Extract
    1 tsp
  • Pure Granulated Cane Sugar
    3/4 cups
  • Whole Wheat Flour (or Organic)
    2 1/2 cups
  • Baking Powder
    2 tsp
  • Baking Soda
    1 tsp
  • Old Fashion Rolled Oats
    1/2 cups
  • Whole Walnuts, Chopped
    1/2 cups
  • Sunflower Seeds
    4 Tbsp
  • White Sesame Seeds
    2 Tbsp

Steps

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Put eggs in a large mixing bowl, whisk well. Add olive oil and vanilla extract, whisk well. Add in cane sugar, whisk well.
  3. In a medium size bowl, thoroughly whisk the flour, baking powder and baking soda. Add mixture to large mixing bowl; use a spatula to blend well.
  4. Add oats, chopped nuts, and seeds in a bowl; add to mixture in large bowl above. Use your hands to mix and blend well.
  5. Use your hand to pinch some of the dough and roll into balls (or squeeze into a ball) and place on parchment paper. Finish the rest. The dough will flatten slightly during the baking process, like the picture above.
